THIS DELIGHTFUL CHIROSO FROM ARNULFO CARO AND MARTHA CARTAGENA IS THE RESULT OF A FAMILY-RUN ENDEAVOR IN ANTIOQUIA. IT FEATURES AN EXTENDED FERMENTATION PROCESS FOLLOWING BY WASHING. WHEN WE INITIALLY CUPPED IT, WE WERE VERY SURPRISED. IT WAS REMARKABLY CLEAN AND JUICY WITH NO SIGNS OF FERMENT DESPITE ITS PROCESSING - A TRUE TESTAMENT TO THE SKILL OF THE TEAM AT HOYO RICO FARM. IN THE CUP, WE GET A REFRESHING INTERACTION OF CITRUS AND MALIC FRUITS, WITH NOTES OF HONEYCRISP APPLE, GRAPEFRUIT, AND TANGERINE EMPHASIZNG THAT SWEET + TART COMBO.
